Would you drink wine that went from grape to vino in an hour? Professors Daniel Attinger from Iowa State University and the École Polytechnique Fédérale de Lausanne in Switzerland have made the impossible, possible.
The intention however, is not to speed up the process, but rather to serve as a testing mechanism during the wine-making process, allowing for more experimentation. The simplified process, according to the professors, is not feasible to have your own version at home, and they note that at this stage, it’s not as good as the real thing. (Full article here.)
I myself am a little skeptical that instant wine will ever be as good as grapes going through the traditional process. It makes me think of instant coffee, while good in a pinch, cannot stand up to firing up the coffee pot. What are your thoughts? Would you try instant wine?
